Makes enough for 1 cake
1 stick butter, room temperature
1/4 cup vegetable shortening
2 ounces cream cheese, room temperature
1 tablespoon + 1 teaspoon corn syrup
1 tablespoon clear vanilla extract, dark will do, too
1 1/4 cups confectioners’ sugar
1/2 teaspoon kosher salt
pinch baking powder
pinch citric acid if you have it!
Mix the butter, shortening, and cream cheese in a bowl until smooth. Add the corn syrup and vanilla. Add the confectioners’ sugar, salt, baking powder and citric acid and mix until smooth. Switch to a whisk and get as much air into the mix as your bicep can stand— this fluffy white mixture doesn’t mix itself!
Flavor your frosting anyway you like, to taste— drizzle in chocolate! Add pb! Strawberry jam? Yes, please!
