Bake Club Blueberry & Corn Bars


Makes 9 squares


1 recipe jammy blueberries (recipe follows)


2 sticks butter, softened

1 cup sugar


1 ea egg


¾ cup flour

⅓ cup corn powder

2 tablespoons cornmeal

¾ teaspoon salt

½ teaspoon baking powder

⅛ teaspoon baking soda


Heat oven to 350F. Grease an 8x8” square baking dish.


In a medium bowl mix together butter and sugar until well combined. Mix in egg and stir until well combined. Add in all dry ingredients and mix just until combined. Spread evenly across the surface of the greased baking dish. Spoon jammy blubeberries in large dollops on the surface of corn mixture, intentionally leaving parts of the corn mixture bare.


Bake Blueberry & Corn Bars at 350F for 30 mins until golden brown on the edges. Serve a square warm or room temperature to your #1 mom/ maternal figure. My mom feels extra loved when it’s over a scoop of vanilla ice cream.



Bake Club Jammy Blueberries

Makes 1 ½ cups


1 ½ teaspoon flour

½ lemon, juiced


12 oz blueberries (1 ¾ cup)

¼ cup sugar

Pinch salt


In a heavy bottom, medium sized pot or saucepan, whisk lemon juice into flour until smooth. Toss blueberries, sugar and salt together with lemon mixture to evenly coat blueberries. On medium-high heat, stirring intermittently, bring mixture to a boil then reduce heat and simmer 3-5 minutes, just as blueberries start to blister, but not further. Remove from heat and cool completely before using.
