
(aka base for killer 7-layer dip)
Serves 8
⅔ cup cups all-purpose flour
1/2 cup yellow cornmeal
¼ cup light brown sugar
2 teaspoons salt
1 teaspoon baking powder
½ teaspoon baking soda
Pinch black pepper
If you have it: 1 cup fresh corn, frozen corn or canned corn, drained
½ sour cream
1 (14.75-ounce) can creamed corn
1 stick butter, melted
1 egg
Heat the oven to 375°F.
Stir together the flour, cornmeal, light brown sugar, salt, baking powder, baking soda, and pepper in a large bowl.
Whisk in sour cream, creamed corn, butter and egg until combined.
Pour the batter into a greased 8x8-inch baking pan. Bake until golden brown but still a tad jiggly in the center, 20 minutes. Let cool slightly in the pan before layering with Beans! Cheese! Salsa! Sour cream! Onions! Lettuce! (It makes the base for a KILLER 7-layer dip)
