Bake Club Lemon Ice



Makes 2 cups, serves 4-6 people


1 ½ cups sugar

1 cup water


¾ cup fresh lemon juice (5 -6 lemons squeezed) (make jam out of the peels!)

¼ teaspoon salt


In a medium size saucepan, bring sugar and water to a boil to dissolve sugar. Off heat, stir in lemon juice and salt.


Pour the mixture into a medium bowl and place in the freezer. Whisk the mixture every 30 minutes or so until frozen into a stretchy-sorbet-like state, about 3 hours.


Scoop into small cups and refresh yourself!
