Cereal Squares



These cereal squares are a beloved DO YOU recipe - make ‘em festive or clean out the cupboards, give em as a gift or keep ‘em to yourself. PRO TIP: Brown the butter first!



Cherry-Pecan Cinnamon Cereal Squares

Makes nine 2” squares.

2 tablespoons unsalted butter

2 ½ cups mini marshmallows

3 cups Cinnamon Toast Crunch

½ cup dried cherries

1/3 cup toasted pecans

½ teaspoon kosher salt


1. Choose a 6”x6” nonstick pan (or pam spray a comparably sized pan) and set aside.


2. In a large heat safe bowl, melt the butter and marshmallows in the microwave, in 30 second intervals until marshmallows have puffed and softened, about 120 seconds. Remove the bowl from the microwave and, with a large spoon or spatula, stir the melted butter and marshmallows completely until smooth.


3. While still warm, stir in cereal and mixins until all ingredients are well coated.


4. Spread and press mixture into the pan, about 1 inch high in thickness. Cool completely at room temperature, then cut into bite-size bars.

Snack or store in an airtight container for up to a week.


Chocolate Chip-Candy Cane Graham Cereal Squares


3 cups golden grahams

½ cup mini choc chips, frozen so they do not melt when mixed in

½ cup peppermints or candy canes, crushed

¼ teaspoon kosher salt

variation:


Substitute the dry ingredients in step 3.


Pumpkin Spice Cereal Squares


2 tablespoons pumpkin puree

3 cups Cinnamon Toast Crunch

½ teaspoon kosher salt

1/8 teaspoon ground ginger

pinch ground nutmeg


variation:

Add the pumpkin puree to the marshmallows and butter in step 2.

Substitute the dry ingredients in step 3.


Banana-Walnut Graham Cereal Squares

½ teaspoon banana extract

3 cups Golden Grahams cereal

½ cup toasted walnuts

1/3 cup banana chips


variation:

Add the banana extract to the marshmallows and butter in step 2.

Substitute the dry ingredients in step 3.


Pistachio-Lemon Cereal Squares

½ teaspoon lemon extract

3 cups Special K cereal

½ cup toasted pistachios

2 ea lemon, zested


variation:


Add the lemon extract to the marshmallows and butter in step 2.

Substitute the dry ingredients in step 3.

Sprinkle lemon zest over the surface once mixture is pressed into the pan in step 4.
