Lime, Yogurt, and Olive Oil Cake


Makes 1 (9 × 5-inch) loaf; serves 8 to 12


the cake

1 cup full-fat Greek yogurt

1/2 cup fancy olive oil

1 cup granulated sugar

3 limes, 3 zested, 2 juiced

2 large eggs

1 large egg yolk

13/4 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

11/4 teaspoons kosher salt


the glaze

1 cup confectioners’ sugar

3 limes, 3 zested, 2 juiced

1 tablespoon fancy olive oil


1. Heat the oven to 350°F. Grease a 9 × 5-inch loaf pan.


2. Make the cake: Whisk together the yogurt, olive oil, granulated sugar, and lime zest and juice in a large bowl until combined. Add the eggs and yolk and whisk them in too. (This should be done by hand; it’s about gently combining the ingredients, not beating them together.)


3. Add the flour, baking powder, baking soda, and salt, mixing until just combined. Take care not to overwork the batter, as every unneeded stir takes your batter farther from perfectly tender and closer to a sad, dense brick.


4. Pour the batter into the greased pan. Bake for 40 to 50 minutes, until the top is golden brown and a tester inserted into the middle comes out clean.


5. While the cake is in the oven, make the glaze: Whisk together the confectioners’ sugar, lime zest and juice, and olive oil in a small bowl.


6. Once the cake has baked, let it cool in the pan for 5 minutes, then invert and put it right side up on a serving platter. While the cake is still warm, pour the glaze evenly over the top and sides. The cake will be moist and slightly sticky. Serve warm, at room temperature, or cold.


Fold 1 cup fresh or dried blueberries into the batter right before baking to achieve a blueberry muffin effect.


The batter makes great actual muffins. Bake in muffin tins lined with cupcake papers for 10 to 12 minutes.


Going the gift route? Bake the batter in a bunch of aluminum foil mini loaf pans. Leave the loaves in their pans once baked and drizzle the glaze on top. Once they have cooled, put them in cellophane bags and tie the bags with string or friendship bracelets.
