Makes about 18 Cookies
2 sticks butter, at room temperature
13⁄4 cups sugar
11⁄4 cups all-purpose flour
1⁄4 cup nonfat milk powder
11⁄2 teaspoons kosher salt
3⁄4 teaspoon baking powder
3⁄4 teaspoon baking soda
21⁄2 cups (1 sleeve + 5) Ritz crackers
Heat the oven to 375°F.
Combine the butter and sugar in the bowl, mixing until smooth. Add the egg, mixing again until well combined. Add flour, milk powder, salt, baking powder, and baking soda, mixing until just combined. Add the crackers and mix until well incorporated. You want your crackers to break down into smaller pieces as you mix, but you don’t want cracker dust.
Scoop 2 to 3 inches apart on a greased baking sheet and bake for 10-12 minutes until golden brown.
Share immediately unless you have enviable self control.
